Ingredients - serves 4
2 tablespoons olive oil | 1 onion, finely chopped |
4oz (115g) smoked bacon, finely chopped | 1¼lb (500g) finely shredded spring greens |
3 tomatoes, skinned and deseeded | 5 or 6 button mushrooms, sliced |
Method
- Heat the oil in a large saucepan, add the onion, bacon, chopped tomatoes and mushrooms and cook for about 7 minutes, stirring occasionally.
- Add the spring greens and salt and pepper.
- Stir for a few minutes over a medium-high heat until the spring greens begins to lose volume.
- Continue to cook, stirring frequently, for 8-10 minutes until the spring greens are tender, but still crisp. (If you like softer spring greens, cover the pan for part of the cooking time.)
This dish can be served as a vegetable accompaniment with roast beef or chicken.
