Butter Cream Icing (and flavours)

 

Ingredients in each example: Sufficient to fill and decorate a 7” (18cm) cake

Butter icing

Method - by Hand

  1. Put butter in a bowl and beat until soft.
  2. Gradually beat in sugar and milk.
  3. Continue beating until light and fluffy.
  4. Stir in vanilla and chill the mixture slightly until it is a little thicker.

Method - by Food Processor

  1. Put all ingredients into the bowl and beat until light and fluffy, scraping down the sides of the bowl to ensure that all ingredients are mixed in.

Various flavoured butter cream icings

Coffee Butter Icing

Follow recipe and method for butter icing but omit vanilla essence and milk.
Dissolve 1 tbsp coffee granules in a little water and add in the place of the milk.

Chocolate Butter Icing

Follow recipe and method for butter icing but omit vanilla essence and milk.
Beat in 2oz (50g) melted and slightly cooled plain chocolate and use only 2 teaspoons of milk.

Orange Butter Icing

Follow recipe and method for butter icing but omit vanilla essence.
Beat 1 teaspoon of finely grated orange rind with the butter before adding the sugar and milk. If liked, colour pale orange with food colouring.
