Strawberry Liqueur

Seasonal Recipe: The Joys of Kentish Fruit

You cannot beat a Kentish cherry or strawberry.  If you want to see some great cherry recipes you should look no further than Lynsted’s very own cherry recipe book.  Thanks to the hard work of The Orchard Group and Parishioners who have shared their recipes you will be able to purchase this at Cherry Day and pick your own cherries at the same time. Perfect!

Strawberry Liqueur

This liqueur can be made with vodka or gin.  I would recommend you use Kentish Strawberries in season or other English Strawberries.  Not only will this reduce “air-miles” but foreign strawberries lack flavour and colour as they are picked for transportation before ripening properly. This liqueur deserves the best.

Ingredients:

Caster Sugar

Vodka or Gin

Method:

  1. Hull (remove the green stalk and leaves around the stalk) enough perfect (ie not bruised) English strawberries to fill a preserving jar or wide necked bottle.
  2. Prick each strawberry a couple of times with a darning needle and place in jar.
  3. Add caster sugar to about a third of the way up the jar.
  4. Fill jar with vodka or gin.  Make sure you add enough to cover the fruit.
  5. Close and keep in a cool dark place for at least a month, during which time the sugar will melt and the fruit will give its colour to the spirit.

You can leave the spirit on the fruit until Christmas, or strain and rebottle it. Serve as a liqueur, or use in individual fruit trifles or in fruit salads. This is a great alternative to crème de cassis for adding to champagne or sparkling wine for a Kir Royale.  This makes an ideal Christmas gift, not that you want to be thinking about that in July.
