Home-made Ginger Lemonade

Reminiscent of hot summer afternoons that went on for ever when we were children!   My preference is for a sharper (I believe more refreshing) drink, but you can add more sugar if you wish. Give it a try and see what you think.

Ingredients: Makes 4 tall glasses

3oz (100g) fresh root ginger

6 lemons

7oz (200g) golden caster sugar

2 pints (1 litre) chilled water

Method:

  1. Peel and chop the root ginger and place in a large pestle and mortar.
  2. Add a couple of spoonfuls of the sugar and pound to a purée adding more sugar as you go along until all the sugar has been used.
  3. Spoon into a large jug along with the zest of three of the lemons and the juice of all six.
  4. Add the chilled water and chill in the fridge for an hour.
  5. Strain into a large serving jug and serve with ice and lemon slices.

We like our ginger lemonade quite sharp.  You may like to add more sugar and/or dilute it with more water.
